Nitrite is the toxic intermediate the nitrogen cycle produces between ammonia and nitrate; like ammonia, it must read zero in a cycled tank.
Seeing nitrite means your tank is still cycling, or a second-stage bacteria colony has faltered. Don't add livestock until both ammonia and nitrite hold at zero.
